Ingredients

1 packet Butter Chicken Spice Blend (Retired)
20 boneless, skinless chicken thighs
½ cup butter
1 white onion, chopped
1 ½ cups cream
1 can (398 mL) tomato sauce
2 Tbsp. olive oil

Instructions

Melt 2 tablespoons of butter in a saucepan over medium heat; add onion
and cook until caramelized. Add remaining butter, stir until melted. Stir in
1 tablespoon Butter Chicken Spice Blend (Retired), then add cream and tomato
sauce. Bring to a simmer, cover, reduce heat and continue to simmer.
While sauce is simmering, put chicken thighs in a bowl and mix with olive oil
and remaining Butter Chicken Spice Blend (Retired). Place chicken in a large skillet
over medium heat and cook for 12-15 minutes. Add sauce to the skillet and
simmer for an additional 10 minutes. Serve with a side of cucumber salad,
basmati rice and Naan bread.
